- 1 cup (240ml) buttermilk
- ½ cup (120ml) vegetable oil
- 4 large eggs, room temperature
- 1 cup (125g) fresh or frozen cranberries
- 2 tablespoons all-purpose flour (for tossing cranberries)
- Zest of 2 large oranges
- ¼ cup orange juice
- ½ cup (120ml) real maple syrup (Grade B or Dark)
- 1 cup (120g) confectioners’ sugar
- Optional: ½ cup chopped pecans
- Optional: ½ cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Thoroughly grease a 12-cup Bundt pan with baking spray containing flour.
- In a small bowl, toss the cranberries with 2 tablespoons of all-purpose flour to prevent them from sinking.
- In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, buttermilk, and orange zest. Whisk vigorously for about 2 minutes until smooth and glossy.
- Gently fold the floured cranberries (and optional pecans or chocolate chips) into the batter using a spatula.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for exactly 10 minutes, then invert onto a wire cooling rack to cool completely.
- While the cake cools, make the glaze by whisking maple syrup and confectioners’ sugar in a small saucepan over low heat until smooth and slightly thickened.
- Drizzle the glaze over the cooled cake and serve.
