A simple, moist, and cozy fall dessert made with just five ingredients. This quick bread mimics the flavor of an apple fritter with a cinnamon sugar crust, requiring no yeast or complex techniques.

- 1 box (15.25 oz / 432g) Yellow or Vanilla Cake Mix
- 1/2 cup (120ml) Vegetable Oil
- 1/2 cup (120ml) Water
- 2 medium Granny Smith or Honeycrisp Apples, peeled and diced (about 3 cups / 300g)
- 1/2 cup (113g) Unsalted Butter, melted
- 1/2 cup Granulated Sugar
- 1 Tablespoon Ground Cinnamon
- Optional: 1/2 cup Chopped Pecans or Walnuts
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
- In a mixing bowl, whisk together the cake mix, water, and vegetable oil until smooth.
- Gently fold in the diced apples (and nuts, if using) until evenly distributed.
- Pour half of the batter into the prepared pan and spread evenly.
- Mix the granulated sugar and cinnamon together, then sprinkle half of the mixture over the first layer of batter.
- Pour the remaining batter on top and smooth it out.
- Sprinkle the remaining cinnamon sugar generously over the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
- Cool in the pan for 10 minutes, then lift out using the parchment paper and cool on a wire rack for 5 minutes before slicing.
Notes
For best texture, dice apples into small 1/2-inch cubes. Peeling the apples is recommended to avoid tough skins. Store in an airtight container at room temperature for up to 3 days. Can be frozen for 2-3 months. Reheat slices in the microwave for 15-20 seconds for a warm treat.
