Description
A cozy, no-cook fall appetizer featuring light and airy cinnamon honey whipped brie surrounded by seasonal fruits, nuts, and crackers. This board is visually stunning, easy to assemble ahead of time, and perfect for autumn gatherings.
Ingredients
- 1 wheel of Brie (10–12 oz / 280-340g), fully ripe
- 3 tablespoons heavy cream (full-fat)
- 2 tablespoons local honey
- 1 teaspoon ground cinnamon
- Pinch of salt
- 1 box crispy crackers (about 12 oz), mix of plain and spiced
- 2 medium apples (Honeycrisp, Fuji, or Gala), thinly sliced
- 2 Fuyu persimmons, sliced
- 1 cup raw pecans
- 1 tablespoon olive oil
- 1 teaspoon fresh rosemary, chopped
- 1/2 cup dried apricots
- 1 cup fresh grapes, halved
- 1 small baguette, sliced and toasted
Instructions
- Prep the Brie: Remove rind if desired (optional), cut cheese into large chunks, and let sit at room temperature for 15 minutes to soften.
- Whip the Brie: In a mixer bowl, combine softened Brie, heavy cream, honey, cinnamon, and salt. Mix on low to combine, then increase to medium-high. Whip for 2-3 minutes until light, fluffy, and holding soft peaks.
- Chill: Transfer whipped brie to a bowl or serving board. Cover and refrigerate for at least 30 minutes (or up to 24 hours) to firm up.
- Prep Fruits and Nuts: While brie chills, slice apples and persimmons (keep in cold water to prevent browning). Halve grapes. Toss pecans with olive oil, salt, and rosemary; roast at 350°F (175°C) for 8-10 minutes until crisp. Let cool.
- Assemble: Place chilled whipped brie in the center of a large board. Drizzle with extra honey and create a swirl pattern with a toothpick. Arrange crackers around the edges. Cluster apple and persimmon slices, scatter grapes and apricots, and sprinkle pecans around the board. Add toasted baguette slices.
- Serve: Serve immediately with small knives for spreading and toothpicks for fruit.
Notes
Ensure the Brie is fully ripe and at room temperature before whipping for the best texture. Keep sliced fruit cold until serving to prevent browning. The board can be assembled 1 hour before guests arrive, but do not assemble too early or crackers may get soggy. For a vegan version, use vegan Brie-style cheese and coconut cream.
