  • 2 cups shredded rotisserie chicken (about 340g)
  • 8 oz full-fat brick-style cream cheese, softened
  • 2 tablespoons butter
  • ½ cup Frank’s RedHot Classic buffalo sauce
  • ½ cup blue cheese crumbles
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Tortilla chips for serving
  • Celery sticks for serving

Instructions

  1. Shred the rotisserie chicken into bite-sized chunks and set aside.
  2. Place a medium skillet over medium-low heat and melt the butter.
  3. Add the cream cheese to the skillet, breaking it into chunks, and stir constantly until soft and creamy (about 3-4 minutes). Do not boil.
  4. Pour in the buffalo hot sauce, garlic powder, and onion powder. Stir until the mixture is smooth and orange-pink.
  5. Add the shredded chicken to the skillet and stir to coat evenly.
  6. Add half of the shredded cheddar cheese and all of the blue cheese crumbles. Stir gently to distribute.
  7. Simmer gently on low heat for 3-5 minutes until the chicken is hot and the cheese is melted.
  8. Transfer to a serving bowl or slow cooker. Sprinkle the remaining cheddar cheese on top.
  9. Serve immediately with tortilla chips and celery sticks.

Notes

Do not rush the cream cheese; keep heat on medium-low to prevent separation. Save half the cheddar for topping. Adjust heat level by varying the amount of hot sauce. This dip does not freeze well due to dairy texture issues. Store leftovers in an airtight container in the fridge for up to 3 days.
