A rich, creamy, and garlicky slow cooker chicken dish featuring sun-dried tomatoes and spinach, specifically designed for small batches to feed one or two people without excessive leftovers.

- 1.5 lbs boneless, skinless chicken thighs (or breasts)
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 4–5 cloves fresh garlic, minced
- 0.5 cup low-sodium chicken broth
- 1 cup heavy cream
- 0.5 cup freshly grated Parmesan cheese
- 0.5 cup sun-dried tomatoes packed in oil, chopped and drained
- 1 teaspoon Italian seasoning
- 0.25 teaspoon red pepper flakes
- 2 cups fresh baby spinach
- 1 tablespoon butter
Instructions
- Trim excess fat from chicken thighs and season generously with salt and pepper on both sides.
- Place seasoned chicken in the bottom of a 2-3 quart slow cooker.
- Whisk together chicken broth, minced garlic, Italian seasoning, and red pepper flakes; pour over the chicken.
- Cover and cook on LOW for 3-4 hours until chicken is tender.
- Stir in chopped sun-dried tomatoes and let sit for 1 minute to plump.
- Stir in heavy cream and grated Parmesan cheese until melted and smooth.
- Turn off the heat and stir in fresh spinach until wilted.
- Stir in butter for a glossy finish and serve immediately over pasta, rice, or cauliflower rice.
Notes
Use fresh garlic for best flavor; pre-grated cheese contains anti-caking agents that prevent smooth melting. Add spinach off-heat to keep it bright green. The sauce will thicken as it cools. This recipe does not freeze well due to the dairy content.
