  • 45 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese

  • Kosher salt and freshly cracked black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Trim the bottom stem off each Brussels sprout and cut them in half vertically. Pat them dry with a paper towel to remove excess moisture.
  3. Place the halved sprouts in a large bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss thoroughly until every piece is lightly coated.
  4. Spread the sprouts out on a large baking sheet in a single layer, ensuring they are not touching to allow for proper roasting and crispiness.
  5. Roast in the preheated oven for 20 minutes. Halfway through (around 10 minutes), pull the pan out and shake or stir the sprouts to ensure even browning.
  6. After 20 minutes, remove the pan from the oven. Sprinkle the minced garlic evenly over the sprouts, followed by the grated Parmesan cheese.
  7. Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly and the garlic is fragrant.
  8. Remove from the oven and let cool for 1-2 minutes. Squeeze fresh lemon juice over the top and taste to adjust seasoning if needed.

Notes

Do not crowd the pan; sprouts need space to roast rather than steam. Add garlic in the last 5 minutes to prevent burning. Grate your own Parmesan cheese for better melting; pre-grated cheese contains anti-caking agents that prevent smooth melting. For a vegan option, substitute Parmesan with nutritional yeast.
