Crispy Garlic Parmesan Broccoli: 5-Step Sheet Pan Dinner

  • Author: Harper
  • Total Time: 20 minutes
  • Yield: 4-6 servings 1x

Description

A quick, easy, and kid-approved sheet pan dinner featuring crispy roasted broccoli tossed with garlic, olive oil, parmesan cheese, and panko breadcrumbs. Ready in just 20 minutes with minimal cleanup.

Ingredients

Scale
  • 2 large heads broccoli crowns (about 800g), cut into florets
  • 6 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 cup grated Parmesan cheese (from a block)
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: 1/2 teaspoon red pepper flakes
  • Optional: Zest of 1 lemon
  • Optional: 1 cup cherry tomatoes, halved

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash broccoli florets and pat them completely dry with paper towels or a salad spinner to ensure crispiness.
  3. In a large mixing bowl, toss the dry broccoli florets with olive oil, minced garlic, salt, and pepper until evenly coated.
  4. Line a large half-sheet pan (18×13 inches) with parchment paper (optional). Spread the broccoli in a single layer, ensuring florets are not touching to prevent steaming.
  5. Roast in the preheated oven for 15 minutes. Check at the 10-minute mark; if browning too quickly, move the pan to a lower rack.
  6. Remove the pan from the oven. Sprinkle the grated Parmesan cheese and panko breadcrumbs evenly over the broccoli.
  7. Return to the oven and roast for another 5 minutes, or until the cheese is melted and golden and the panko is crispy.
  8. Serve immediately while hot and crispy.

Notes

Do not crowd the pan; space is crucial for crispiness. Pat broccoli dry before oiling to avoid steaming. Use fresh grated Parmesan, not pre-grated, for better melting. For extra crunch, toast panko in a dry skillet before adding. Store leftovers in an airtight container for up to 4 days; reheat in a skillet or oven to maintain crispness.
