Description

Spicy, tangy, and crispy buffalo chicken egg rolls with a creamy blue cheese dip. These game day appetizers are easier to make than takeout and perfect for crowds.


Ingredients

  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 4 oz full-fat cream cheese, softened
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons melted butter
  • 1 package egg roll wrappers (1216 wrappers)
  • 1/2 cup full-fat plain Greek yogurt
  • 1/2 cup creamy blue cheese dressing
  • 2 tablespoons blue cheese crumbles
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Water for sealing wrappers

Instructions

  1. In a large mixing bowl, combine shredded chicken, softened cream cheese, buffalo sauce, melted butter, garlic powder, and onion powder. Mix until well combined and moist but not soupy.
  2. Lay an egg roll wrapper in a diamond shape. Place 2-3 tablespoons of filling in the center, slightly below the middle point.
  3. Fold the bottom point up over the filling, then fold in the left and right points toward the center to form an envelope shape.
  4. Dip a finger in water and wet the top point of the wrapper, then roll it up tightly, pressing the wet edge to seal. Place seam side down on a plate.
  5. Repeat with remaining wrappers and filling.
  6. In a small bowl, mix Greek yogurt, blue cheese dressing, blue cheese crumbles, and lemon juice to make the dip. Refrigerate until serving.
  7. Heat 1-2 inches of vegetable oil in a large skillet or pot to 350°F (175°C).
  8. Fry egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown and crispy. Do not overcrowd the pan.
  9. Remove egg rolls to a wire rack to drain. Serve immediately with the blue cheese dip.

Notes

Keep egg roll wrappers covered with a damp towel to prevent drying out. Use a wire rack instead of paper towels for draining to maintain crispiness. Can be frozen unfried for meal prep. For a lighter version, use turkey and skip the cream cheese.
