Description
Spicy, tangy, and crispy buffalo chicken egg rolls with a creamy blue cheese dip. These game day appetizers are easier to make than takeout and perfect for crowds.

- 2 cups shredded cooked chicken (rotisserie recommended)
- 1/2 cup buffalo sauce (Frank’s RedHot recommended)
- 4 oz full-fat cream cheese, softened
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 tablespoons melted butter
- 1 package egg roll wrappers (12–16 wrappers)
- 1/2 cup full-fat plain Greek yogurt
- 1/2 cup creamy blue cheese dressing
- 2 tablespoons blue cheese crumbles
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Vegetable oil for frying
- Water for sealing wrappers
Instructions
- In a large mixing bowl, combine shredded chicken, softened cream cheese, buffalo sauce, melted butter, garlic powder, and onion powder. Mix until well combined and moist but not soupy.
- Lay an egg roll wrapper in a diamond shape. Place 2-3 tablespoons of filling in the center, slightly below the middle point.
- Fold the bottom point up over the filling, then fold in the left and right points toward the center to form an envelope shape.
- Dip a finger in water and wet the top point of the wrapper, then roll it up tightly, pressing the wet edge to seal. Place seam side down on a plate.
- Repeat with remaining wrappers and filling.
- In a small bowl, mix Greek yogurt, blue cheese dressing, blue cheese crumbles, and lemon juice to make the dip. Refrigerate until serving.
- Heat 1-2 inches of vegetable oil in a large skillet or pot to 350°F (175°C).
- Fry egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown and crispy. Do not overcrowd the pan.
- Remove egg rolls to a wire rack to drain. Serve immediately with the blue cheese dip.
Notes
Keep egg roll wrappers covered with a damp towel to prevent drying out. Use a wire rack instead of paper towels for draining to maintain crispiness. Can be frozen unfried for meal prep. For a lighter version, use turkey and skip the cream cheese.
