Crispy Baked Zucchini Chips: Best Easy Parmesan Snack

  • Author: Harper
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

These crispy baked zucchini chips with Parmesan and garlic are a quick, healthy, and kid-approved snack or side dish that delivers a satisfying crunch without deep frying.

Ingredients

Scale
  • 2 medium zucchini (about 400g)
  • 4 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons cornstarch
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Black pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash zucchini and trim ends. Slice into 1/8-inch thick rounds. If watery, sprinkle with salt, sit on paper towels for 10 minutes, then pat dry thoroughly.
  3. Place zucchini slices in a large bowl. Drizzle with olive oil and toss to coat. Sprinkle with cornstarch and toss again until evenly coated.
  4. Transfer coated zucchini to a plate and let sit for 2 minutes while oven preheats.
  5. In a small bowl, mix Parmesan, minced garlic, Italian seasoning, salt, pepper, and red pepper flakes.
  6. Line two baking sheets with parchment paper. Arrange zucchini slices in a single layer without overlapping.
  7. Press a generous pinch of the Parmesan mixture onto the center of each zucchini slice, pressing gently to adhere.
  8. Bake for 15-18 minutes, rotating pans halfway through, until Parmesan is golden brown and bubbly.
  9. Remove from oven and let cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely and crisp up.

Notes

Ensure zucchini slices are dry before coating to maximize crispiness. Do not overcrowd the baking sheet; bake in batches if necessary. Use freshly grated Parmesan for best results, as pre-grated cheese contains anti-caking agents that prevent proper crisping. Cool on a wire rack to prevent sogginess.
