A simple, 5-ingredient breakfast that is creamy, rich, and perfect for meal prep. These overnight oats combine rolled oats, chia seeds, peanut butter, and milk for a satisfying, high-protein start to your day.

- 1 cup old-fashioned rolled oats
- 2 tablespoons chia seeds
- 2 tablespoons creamy natural peanut butter
- 1 cup milk (dairy or plant-based)
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
Instructions
- Add 1/4 cup old-fashioned rolled oats and 1.5 tablespoons chia seeds to each of four 16-ounce mason jars.
- Pour 1/4 cup milk into each jar, followed by 1 tablespoon honey or maple syrup and cinnamon if using.
- Add 1.5 tablespoons of peanut butter to each jar.
- Stir the mixture vigorously until the peanut butter is broken up and ingredients are well combined.
- Seal jars tightly and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
- Before eating, stir again. Add a splash of milk if the mixture is too thick.
- Top with fresh fruit, nuts, or extra peanut butter as desired and serve cold.
Notes
Do not use instant oats as they turn to mush, and do not use steel-cut oats as they do not soften enough. Natural peanut butter is recommended for best texture. Store in the refrigerator for up to 5 days. Do not freeze as the texture will become mushy.
