- 1 cup unsweetened almond milk
- 1/2 cup canned pumpkin puree
- 1/4 cup frozen cauliflower rice
- 1 scoop vanilla protein powder
- 1 tablespoon almond butter
- 1 teaspoon pumpkin pie spice
- 1 teaspoon maple syrup or honey (optional)
- 1/2 cup ice cubes
Instructions
- Pour the almond milk into the blender first to help the blades spin freely.
- Add the protein powder to the liquid to help it dissolve and reduce clumps.
- Add the pumpkin puree, frozen cauliflower, almond butter, pumpkin pie spice, and optional sweetener.
- Secure the lid and start the blender on low speed for 10 seconds to break up the frozen cauliflower.
- Gradually increase to high speed and blend for 45-60 seconds until completely smooth and creamy.
- Taste and adjust consistency or sweetness if needed.
- Pour into a glass and serve immediately.
Notes
Frozen cauliflower is recommended for texture without extra sugar; do not reheat as it ruins the texture. Best consumed fresh. Can be made vegan by using plant-based protein and oat milk.
