Description

Ingredients

  • 1 cup unsweetened almond milk
  • 1/2 cup canned pumpkin puree
  • 1/4 cup frozen cauliflower rice
  • 1 scoop vanilla protein powder
  • 1 tablespoon almond butter
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon maple syrup or honey (optional)
  • 1/2 cup ice cubes

Instructions

  1. Pour the almond milk into the blender first to help the blades spin freely.
  2. Add the protein powder to the liquid to help it dissolve and reduce clumps.
  3. Add the pumpkin puree, frozen cauliflower, almond butter, pumpkin pie spice, and optional sweetener.
  4. Secure the lid and start the blender on low speed for 10 seconds to break up the frozen cauliflower.
  5. Gradually increase to high speed and blend for 45-60 seconds until completely smooth and creamy.
  6. Taste and adjust consistency or sweetness if needed.
  7. Pour into a glass and serve immediately.

Notes

Frozen cauliflower is recommended for texture without extra sugar; do not reheat as it ruins the texture. Best consumed fresh. Can be made vegan by using plant-based protein and oat milk.
