  • 2 pounds boneless, skinless chicken breasts (cut into 1-inch chunks)
  • 2 cans (15oz each) white beans (cannellini or Great Northern), rinsed
  • 1 can (4oz) mild green chiles, drained
  • 32 ounces (4 cups) low-sodium chicken broth
  • 45 stalks green onions (diced)
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 4 ounces cream cheese (softened and cubed)
  • ½ cup heavy cream (or half-and-half)
  • Optional toppings: shredded Monterey Jack cheese, sour cream, corn, black olives

Instructions

  1. Cut chicken breasts into 1-inch chunks and toss in a bowl with cumin, garlic powder, and chili powder.
  2. Pour chicken broth into the bottom of a slow cooker to prevent burning.
  3. Add seasoned chicken chunks, rinsed white beans, drained green chiles, and diced green onions to the slow cooker. Stir gently to combine.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender.
  5. Turn slow cooker to HIGH. Add softened cream cheese cubes and heavy cream.
  6. Stir gently but thoroughly for 10-15 minutes until cream cheese is melted and sauce is smooth. Do not boil.
  7. Taste and adjust seasoning with salt or red pepper flakes if desired. If too thick, let cook uncovered for 20 minutes; if too thin, add a splash of broth.
  8. Ladle into bowls and top with reserved green onion tops, shredded cheese, and sour cream. Serve with crusty bread or tortilla chips.

Notes

Softening the cream cheese beforehand is crucial for a smooth texture. Rinse beans well to remove excess sodium and starch. For a thicker chili, mash some beans against the side of the pot before adding cream. This recipe freezes well for up to 3 months.
