A simple, weeknight-friendly recipe for tender, juicy pork chops braised in a sweet and savory apple cider glaze with onions and thyme. Ready in under 40 minutes with just a few pantry staples.

- 4 bone-in pork chops (about 1-inch thick / 600g)
- Kosher salt and freshly cracked black pepper
- 1.5 cups (360ml) 100% apple cider
- 2 tablespoons unsalted butter
- 1 medium yellow onion, sliced into half-moons
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 tablespoon oil (for searing)
- Optional: 2 tablespoons heavy cream
- Optional: Fresh parsley for garnish
Instructions
- Pat pork chops dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 10-15 minutes.
- Heat a large skillet or Dutch oven over medium-high heat with oil. Sear pork chops for 3 minutes on one side until golden brown, then flip and sear for 2 minutes on the other side. Remove chops to a plate.
- Reduce heat to medium. In the same pan, sauté sliced onions for 3-4 minutes until softened and translucent.
- Pour in apple cider and scrape up brown bits from the bottom of the pan (deglaze). Simmer for 2 minutes.
- Return pork chops to the pan, nestling them into the sauce. Sprinkle with dried thyme and garlic powder. Cover with a lid and reduce heat to low-medium. Simmer for 15-20 minutes until internal temperature reaches 145°F.
- Remove lid and increase heat to medium-high. Simmer uncovered for 5-7 minutes until sauce reduces by half and thickens into a glaze.
- Remove from heat. Stir in remaining butter (and heavy cream if using). Taste and adjust seasoning. Serve topped with sauce and garnished with parsley.
Notes
Bone-in pork chops stay juicier than boneless. Ensure you use 100% apple cider, not apple juice or cocktail mix, for the best flavor. Do not skip the searing step as it adds depth. Pork chops are done at 145°F; overcooking will make them dry. This recipe does not freeze well.
