  • 8 oz (225g) block feta cheese, drained and patted dry
  • 4 oz (115g) full-fat cream cheese, softened
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper
  • 2 large English cucumbers, sliced into 1/2-inch rounds
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon extra virgin olive oil
  • Red pepper flakes (optional, for garnish)
  • Microgreens or parsley (optional, for garnish)

Instructions

  1. Drain the feta cheese well and pat it dry with paper towels to remove excess moisture.
  2. Add the drained feta, softened cream cheese, lemon juice, minced garlic, and black pepper to a food processor.
  3. Pulse until the mixture is smooth and creamy, scraping down the sides as needed.
  4. Transfer the whipped feta to a bowl, cover, and refrigerate while preparing the cucumbers.
  5. Wash the cucumbers, trim the ends, and slice into 1/2-inch thick rounds. If using regular cucumbers, peel the skin and scoop out seeds.
  6. Line the cucumber rounds on a serving platter.
  7. Dollop or pipe a teaspoon of whipped feta onto each cucumber round.
  8. Sprinkle generously with chopped fresh dill and drizzle with extra virgin olive oil.
  9. Garnish with red pepper flakes and microgreens if desired, then serve immediately.
