A rustic, comforting Southern peach cobbler with a buttery biscuit topping that uses canned peaches for a quick 15-minute prep time, perfect for weeknight desserts.
Ingredients
- 2 cans (15 oz each) canned peaches in heavy syrup
- 1/2 cup granulated sugar (for filling)
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup granulated sugar (for topping)
- 1/2 cup unsalted butter, melted
- 1/2 cup whole milk
- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish with butter or non-stick spray.
- Drain the canned peaches, reserving the syrup. Place peaches in the prepared baking dish.
- In a small bowl, mix the reserved syrup, 1/2 cup sugar, cinnamon, and lemon juice. Pour over the peaches and stir gently to coat. If the syrup is thin, mix in 1 tablespoon of cornstarch to thicken.
- In a medium bowl, whisk together the flour, baking powder, and 1/4 cup sugar.
- In a separate small bowl, combine the melted butter, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently with a wooden spoon until just combined. The batter should be thick and lumpy; do not overmix.
- Scoop dollops of the biscuit batter evenly over the peach filling. Do not worry about covering every peach completely.
- Bake for 30-35 minutes until the topping is golden brown and the filling is bubbling vigorously around the edges.
- Remove from oven and let cool for at least 10 minutes to allow the sauce to thicken.
- Serve warm with vanilla ice cream or whipped cream.
Notes
Save the syrup from the canned peaches to add depth of flavor to the filling. Do not overmix the biscuit batter to ensure a tender texture rather than a tough, bread-like one. The cobbler is done when the filling is bubbling vigorously. For a gluten-free version, use a 1:1 gluten-free flour blend. For a dairy-free version, substitute coconut milk and coconut oil.
