  • 2 tablespoons softened unsalted butter
  • Kosher salt and freshly cracked black pepper
  • 4 cloves garlic, minced
  • 1/2 cup pure maple syrup (Grade A Dark Robust or Grade B)
  • 2 tablespoons whole grain Dijon mustard
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1012 fresh sage leaves, torn
  • 2 sprigs fresh thyme
  • 3 large carrots, chopped into chunks
  • 2 medium onions, quartered
  • 2 lbs potatoes (Yukon Gold preferred), quartered
  • 1 large apple, sliced
  • Olive oil for tossing vegetables

Instructions

  1. Remove turkey breast from refrigerator 30 minutes before cooking. Pat dry with paper towels.
  2. Rub the turkey surface with softened butter. Season generously with salt and pepper. Slide fingers under the skin to create pockets and rub minced garlic and salt underneath.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, and chopped sage to make the glaze.
  4. Preheat oven to 400°F (200°C). Toss carrots, onions, potatoes, and apple with olive oil, salt, and pepper.
  5. Spread vegetables on a roasting pan or sheet pan with a rack. Roast for 20 minutes.
  6. Remove pan from oven. Push vegetables to the sides and place turkey breast skin-side up in the center.
  7. Brush turkey generously with half of the maple glaze. Roast for 45 minutes.
  8. Check temperature. If around 150°F (65°C), remove pan and brush with remaining glaze. Return to oven.
  9. Roast until internal temperature reaches 160°F (71°C) at the thickest part (approx. 20-30 minutes).
  10. Remove turkey from oven and transfer to a cutting board. Tent loosely with foil and rest for 15 minutes.
  11. Slice turkey against the grain and serve with roasted vegetables and extra glaze.

Notes

Do not skip the resting period; it ensures the meat remains juicy. Use Grade B or Dark Robust maple syrup for a stronger flavor. If using frozen turkey, thaw in the fridge for 24-48 hours. For leftovers, store in an airtight container for up to 4 days or freeze for up to 3 months. Reheat gently in the oven with broth to prevent drying out.
