A cheap, fast, and customizable stir fry made with instant ramen, eggs, and frozen vegetables. Perfect for students or anyone on a tight budget who needs a delicious meal in under 10 minutes.

- 1 packet (85g) Instant Ramen Noodles (chicken or beef flavor)
- 1 large Egg
- 1 cup (100g) Frozen Mixed Vegetables (peas and carrots)
- 1 tablespoon (15ml) Soy Sauce
- 1 teaspoon (5ml) Sesame Oil
- 1 clove Garlic, minced (or ½ teaspoon garlic powder)
- ½ teaspoon Red Pepper Flakes (optional)
- Water (for cooking noodles)
- Optional: Hot dogs, Spam, Green Onions, Corn, or Cheese
Instructions
- Prep ingredients: Crack and lightly beat the egg. Chop green onions if using. Have soy sauce and sesame oil ready.
- Cook the egg: Heat a skillet over medium heat. Pour in beaten egg and scramble until just cooked but still soft. Remove from pan and set aside.
- Sauté veggies: In the same pan, add frozen vegetables. Cook for 2-3 minutes until hot and water has evaporated. Add minced garlic and stir for 30 seconds until fragrant.
- Cook noodles: Break ramen block in half. Add noodles to the pan with veggies. Pour in ½ cup water. Cover and steam for 2-3 minutes until noodles are soft. Skip the seasoning packet to control salt.
- Add sauce: Remove lid. Pour in soy sauce and sesame oil. Toss to coat noodles evenly. Add a splash of water if noodles look dry.
- Combine and finish: Add cooked egg back to the pan. Toss with noodles and veggies. Taste and adjust salt if needed.
- Serve: Serve immediately in a bowl. Top with green onions and red pepper flakes if desired.
Notes
Skip the seasoning packet included with the ramen to avoid excessive sodium and artificial flavors. Use frozen vegetables for cost savings and convenience. If noodles are too dry, add a splash of water. If too salty, add water to dilute. Do not freeze leftovers as noodles become mushy.
