Instructions

  1. Preheat oven to 350°F (175°C). Toast walnuts on a baking sheet for 5-7 minutes until fragrant, then let cool completely.
  2. Wash and grate zucchini using the medium side of a box grater. Place grated zucchini in a clean kitchen towel or cheesecloth and squeeze hard to remove excess liquid.
  3. In a large bowl, whisk together vegetable oil, brown sugar, eggs, and vanilla extract vigorously for about 1 minute until pale and slightly thickened.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cardamom.
