  • 1 cup heavy cream or whole milk
  • 1.5 cups (180g) feta cheese, crumbled
  • 3 cloves garlic, minced
  • 10 oz (300g) fresh spinach (or 5 cups packed)
  • 1 small yellow onion, diced
  • 1 teaspoon black pepper, freshly cracked
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil or butter
  • Salt to taste (optional, depending on feta saltiness)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Heat olive oil or butter in a large skillet over medium heat. Sauté diced onion for 3-4 minutes until soft.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add fresh spinach to the skillet and stir until completely wilted and reduced. If using frozen spinach, thaw and squeeze out all excess water.
  5. In a large mixing bowl, whisk eggs, heavy cream, black pepper, nutmeg, and salt vigorously for 30 seconds until frothy.
  6. Stir crumbled feta cheese into the egg mixture.
  7. Fold in the cooked spinach and onion mixture (and any optional add-ins like sun-dried tomatoes or meat).
  8. Pour the mixture into the prepared baking dish and smooth the top.
  9. Bake for 30-35 minutes until edges are set and golden, and the center jiggles slightly like jello.
  10. Let the casserole rest for 10 minutes before slicing and serving.

Notes

If using frozen spinach, it is critical to squeeze out all excess water to prevent a watery casserole. If assembling the night before, cover tightly and refrigerate; add 5-10 minutes to baking time if starting from cold. The casserole will continue to set as it cools.
