  • Author: Harper
  • Total Time: 35 minutes
  • Yield: 8 servings 1x

Description

A creamy, spicy, and tangy baked buffalo chicken dip with a cool ranch drizzle. This easy-to-make appetizer is perfect for parties, game days, or weeknight dinners, requiring minimal prep time and maximum flavor.

Ingredients

Scale
  • 3 cups shredded cooked chicken (rotisserie recommended)
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 1/2 cup buffalo sauce (Frank’s RedHot or similar)
  • 1/2 cup blue cheese dressing
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sour cream
  • 1/4 cup creamy ranch dressing
  • 2 stalks green onions, sliced
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Corn tortilla chips, for serving
  • Warm tortillas, for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened cream cheese, buffalo sauce, and blue cheese dressing. Beat with an electric mixer on medium speed until smooth and creamy (about 2 minutes).
  3. Add the shredded chicken to the cream cheese mixture and stir until evenly coated.
  4. Spread the chicken mixture evenly into a 9×13 baking dish.
  5. Sprinkle the shredded mozzarella cheese over the top, covering the entire surface.
  6. Bake for 20-25 minutes, or until the cheese is bubbly and starting to brown in spots.
  7. While the dip bakes, whisk together sour cream and ranch dressing in a small bowl until smooth. Thin with a teaspoon of milk or buttermilk if necessary to achieve a drizzle-able consistency.
  8. Remove the dip from the oven and let it sit for 2-3 minutes to cool slightly.
  9. Drizzle the ranch sauce over the top in a zigzag pattern.
  10. Sprinkle with sliced green onions.
  11. Serve immediately with celery sticks, carrot sticks, and tortilla chips.

Notes

[‘Ensure cream cheese is fully softened to avoid lumps.’, ‘For a thinner dip, bake for 5 more minutes to evaporate moisture.’, “If cheese isn’t browning, broil for 1-2 minutes while watching closely.”, ‘To reduce spice, add more cream cheese or sour cream.’, ‘Can be assembled up to 24 hours ahead and refrigerated before baking.’, ‘Does not freeze well due to dairy separation.’]
