  • ½ cup Fig Jam (120g)
  • ¼ cup Pistachios (30g, chopped)
  • 23 sprigs Fresh Rosemary or Thyme
  • 2 cloves Garlic (minced)
  • Crackers or Baguette slices for serving
  • Optional: Honey drizzle, sea salt flakes, red pepper flakes

Instructions

  1. Preheat oven to 350°F (175°C). Line a small baking dish (like a 7-inch pie dish) with parchment paper.
  2. Remove the brie from packaging and pat dry with a paper towel. If cold, let it sit at room temperature for 15 minutes.
  3. Using a paring knife, gently score the top rind of the brie in a crosshatch pattern, cutting about ¼ inch deep without cutting through.
  4. Spread the fig jam evenly over the top of the brie, allowing it to seep into the cuts. If the jam is thick, warm it slightly in the microwave for 10 seconds.
  5. Sprinkle minced garlic, chopped pistachios, and rosemary leaves over the jam. Press them gently to adhere.
  6. Bake for 15-20 minutes until the cheese is soft to the touch and the jam is bubbling.
  7. Remove from oven and let rest for 5 minutes to allow the cheese to set slightly.
