  • 1 package (32-36 links) Oscar Mayer Smokies or similar pre-cooked mini smoked sausages
  • 1216 slices regular cut bacon
  • 1 cup packed dark brown sugar
  • 1/2 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Line two large rimmed baking sheets with parchment paper or silicone mats.
  2. Wrap each Smokie with a slice of bacon, spiraling it down the length of the sausage. Overlap ends slightly to secure.
  3. In a small bowl, whisk together brown sugar, ketchup, Worcestershire sauce, garlic powder, black pepper, and cayenne pepper until smooth.
  4. Stir in the melted butter until combined.
  5. Place wrapped Smokies on the prepared baking sheets.
  6. Bake for 20 minutes to cook the bacon and render fat.
  7. Remove from oven and spoon the glaze generously over each Smokie, ensuring it gets into the crevices.
  8. Return to oven and bake for another 10-15 minutes, watching closely, until bacon is crispy and glaze is bubbling and caramelized.
  9. Let cool for 5 minutes before serving.

Notes

Ensure pans are lined with parchment paper as the sugar glaze will caramelize and stick. If using thick-cut bacon, increase baking time by 10-15 minutes. Can be made ahead by wrapping sausages and storing in the fridge for up to 24 hours before baking. Do not freeze cooked smokies; freeze uncooked wrapped smokies instead.
