  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup walnuts or pecans, chopped (optional)
  • 1 tablespoon chia seeds

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin generously with butter or non-stick spray.
  2. In a large mixing bowl, combine rolled oats, chopped nuts, chia seeds, cinnamon, nutmeg, and salt. Stir to distribute spices evenly.
  3. In a separate bowl, whisk together eggs, maple syrup, melted butter, and milk until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until moistened. Fold in diced apples.
  5. Divide batter evenly among the 12 muffin cups, pressing down slightly with the back of a spoon.
  6. Bake for 25-30 minutes until tops are golden brown and a toothpick inserted into the center comes out clean.

Notes

Do not use instant or steel-cut oats as they alter the texture. For extra moisture, add a dollop of Greek yogurt. These freeze well for up to 3 months. Ensure apples are diced uniformly for consistent baking.
