- 2 medium apples, peeled and diced (Granny Smith and Honeycrisp recommended)
- 1 ½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ½ cup walnuts or pecans, chopped (optional)
- 1 tablespoon chia seeds
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin generously with butter or non-stick spray.
- In a large mixing bowl, combine rolled oats, chopped nuts, chia seeds, cinnamon, nutmeg, and salt. Stir to distribute spices evenly.
- In a separate bowl, whisk together eggs, maple syrup, melted butter, and milk until smooth.
- Pour wet ingredients into dry ingredients and stir gently until moistened. Fold in diced apples.
- Divide batter evenly among the 12 muffin cups, pressing down slightly with the back of a spoon.
- Bake for 25-30 minutes until tops are golden brown and a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving or storing.
Notes
Do not use instant or steel-cut oats as they alter the texture. For extra moisture, add a dollop of Greek yogurt. These freeze well for up to 3 months. Ensure apples are diced uniformly for consistent baking.
