Instructions

  1. Wash and scrub sweet potatoes thoroughly. Peel if desired, then cut into ½-inch thick wedges, aiming for 12-16 uniform pieces.
  2. Soak the wedges in a bowl of cold water for 10-15 minutes to remove excess starch. Drain and pat completely dry with paper towels.
  3. In a large bowl, toss the dried wedges with avocado oil until lightly coated.
  4. In a small bowl, whisk together granulated sugar, powdered sugar, cinnamon, and salt.
  5. Sprinkle the sugar mixture over the oiled wedges and toss until evenly coated, ensuring a thin, even layer.
  6. Line the air fryer basket with parchment paper (optional). Arrange wedges in a single layer without overlapping.
  7. Cook at 380°F (190°C) for 10 minutes.
  8. Open the basket and shake or flip the wedges to ensure even browning.
  9. Cook for another 5-8 minutes, checking frequently to prevent the sugar from burning.
