Instructions

  1. Thaw frozen shrimp in cold water for 15 minutes if necessary. Drain and pat shrimp thoroughly dry with paper towels. Season lightly with salt and pepper.
  2. Set up a dredging station with three shallow bowls: one with flour and cornstarch mixed together, one with beaten eggs, and one with Panko breadcrumbs.
  3. Dredge each shrimp in the flour/cornstarch mixture, shaking off excess. Dip into the egg wash, letting excess drip off. Press firmly into the Panko breadcrumbs to ensure coating adheres.
  4. Preheat air fryer to 400°F (200°C) for 3 minutes.
  5. Lightly brush or spray the coated shrimp with vegetable oil.
  6. Place shrimp in the air fryer basket in a single layer, ensuring they do not overlap. Cook at 400°F for 4 minutes.
  7. Flip the shrimp and cook for another 4-6 minutes until golden brown, crispy, and opaque inside.
  8. While shrimp cook, whisk together mayonnaise, Sriracha, sweet chili sauce, lime juice, sugar (if using), and garlic powder in a small bowl.
  9. Immediately toss the hot, cooked shrimp in a large bowl with the Bang Bang sauce until evenly coated.
  10. Serve immediately with lime wedges and cilantro.

Notes

Ensure shrimp are completely dry before dredging to prevent coating from sliding off. Do not overcrowd the air fryer basket; cook in batches if necessary. Toss shrimp in sauce immediately while hot for best adhesion. For a gluten-free version, use gluten-free flour and Panko.
